It’s a bountiful time in the vegetable garden! Who’s got zucchini coming out of their ears? With lots of vegetables to harvest, it’s good to get creative about how to use them. For those of you that planted basil, we have a delicious recipe to try. (If you didn’t grow any, you can always grab some from the grocery store or farmer’s market).

Basil

Homemade pesto is incredibly easy and so delicious! It goes well with pasta, on pizza, spread on sandwiches or used as a marinade. It also freezes beautifully so you can always make a lot and save some.

Ingredients

2 cups packed fresh basil leaves
2 cloves raw garlic
1/4 cup pine nuts or walnuts
2/3 cup extra-virgin olive oil, divided
1/2 cup freshly grated Pecorino or Parmesan cheese

Salt and pepper to taste
Directions

Combine the basil, garlic, and pine nuts in a food processor or blender and pulse until coarsely chopped. Add 1/2 cup of the oil and process until fully incorporated and smooth. Add all the remaining oil and the cheese and pulse until smooth. Season with salt and pepper and taste.

You can always add more of any of the ingredients to get the flavor balance that suits your palate. Some people like extra garlic. Some want more oil to make it very creamy. Find out what you like best. Enjoy!
